Turkey Leftover Pizza
Store-bought pizza dough, room temperature
Leftover mashed potatoes
Leftover cranberry sauce
Leftover turkey, shredded
Small red onion, thinly sliced
2-3 ounces Gorgonzola cheese (or cheese of choice)
Handful of mixed salad greens, roughly chopped
1 teaspoon garlic powder
Salt and pepper
Hot pepper flakes and oregano for topping (if desired)
All-purpose flour for dusting dough
Cornmeal to keep dough from sticking to pan
Place a pizza stone or flat cookie sheet into the oven and preheat oven to 425 degrees F (bake setting if available).
Dust a small handful of flour onto a clean, cool, flat surface. Roll out your pizza dough to desired shape (don’t worry about making a perfect circle, a misshaped dough gives your pizza a beautiful, rustic look).
Once oven is preheated and pizza stone or cookie sheet it hot, using oven mitts, remove stone or pan from the oven and dust it lightly with cornmeal. Place rolled out dough directly onto the stone or sheet and place back in the oven for about 5 minutes, or until the dough is hardened a bit and set. Remove from the oven.
Brush par-cooked dough lightly with olive oil. Sprinkle with a touch of salt and garlic powder and top pizza dough with desired Thanksgiving leftovers.
Top pizza with red onion and cheese. Drizzle entire pizza with a touch of olive oil and place back on the pizza stone or sheet and bake in the oven until cheese is melted and dough is lightly browned and crisp, about 5-8 minutes.
Top pizza with salad greens, additional olive oil, salt, pepper, red pepper flakes and oregano if desired. Serve.
